Homemade Gnocchi

Gnocchi is a dumpling made with either potato, ricotta cheese, or spinach. The texture varies from light to doughy, depending on the ingredients. The potato dumplings can be served with many different sauces or simply butter and Parmesan cheese.

Here are the steps to make Homemade Gnocchi:

4 lbs. small potatoes
2 egg yolks
1 teaspoon salt
2 cups of flour (or more as needed)

  1. Cook the potatoes in a large pot of heavily-salted, boiling water over medium heat for 25 to 30 minutes, or until tender. Drain. Peel the potatoes and return to the pot. Using a potato masher, mash the potatoes over very low heat, letting them dry out as much as you mash them. Make sure no lumps remain.
  2. In a large bowl, combine the mashed potatoes, egg yolks, salt, and 1.5 cups of flour. Turn mixture onto a clean work surface dusted with ½ cup of flour. Knead several minutes, adding in flour as needed, until a soft dough is formed. Divide the dough into 4 equal pieces. Dust the work surface with more flour if needed. With your palm, roll out the dough into 3/4-inch thick ropes. Then, cut into 1-inch pieces.
  3. In a large pot of boiling water, cook one quarter of the gnocchi at a time. When the gnocchi rise to the surface of water, remove with a slotted spoon to warm serving bowl. Toss with melted butter, Parmesan cheese, then season salt and pepper. Alternatively, serve the gnocchi with your favorite sauce such as marinara, Alfredo, or pesto.
