Shrimp Fra Diavolo

Fra Diavolo is a sauce conceptualized in Italy and widely claimed to be defined in America. Seafood being a major part of Italian cuisine, you can find shrimp fra diavolo widely served across the world today. Ingredients

  • 2 lb. fresh shrimp — peeled and deveined
  • 3 tbsp. Sicilian extra-virgin olive oil
  • 3–4 cloves garlic — finely chopped or grated
  • about 3 Roma large tomatoes — diced/crushed
  • 4–5 tsp. crushed red pepper flakes (plus more for garnish)
  • 1/2 cup dry white wine
  • 1/2 tsp. dry white wine
  • 1 Pinch of salt
  • 1 Pinch of pepper
  • 1 Pinch of Italian parsley
  • 6–7 basil leaves — chopped
  • 8 oz. linguine pasta

Directions

  1. Chop your basil, garlic, and tomatoes. Peel & devein your shrimp if needed.
  2. Bring a large pot of water to a boil. Add salt liberally, let water return to a boil and cook pasta to al dente (takes about 6min!). Drain and set aside.
  3. Meanwhile, heat a large skillet over medium heat with Sicilian extra-virgin olive oil. Add garlic, shrimp, and red pepper flakes and sauté. 
  4. Add chopped parsley, adjust flavor with salt & pepper as needed.
  5. Add white wine and cook for 2–3 minutes. 
  6. Add tomatoes (you can substitute with marinara sauce) and fresh basil, let simmer for 2–3 minutes.
  7. Raise the heat a bit then add pasta. Stir and cook for 2 minutes. Add additional seasoning for taste and serve. Garnish with more pepper flakes to raise the heat.
